Solid brass gasburner cap
Gas burner caps are exposed to combustion and may become covered with a layer of black.
To remove this layer, clean it in water using a stone powder finishing buff (a white sponge with one side
in charcoal grey, sold in supermarkets), or “Scotchbrite” and an all-purpose soap. Wipe with parallel move-
ments, as a circulation motion simply puts back what you have just removed.
A small quantity of “Bistrot” type copper cleaner can also be used, to shine the brass.
As the gasburner cap are in solid brass, they withstand polishing and burnishing. So, don’t worry about
rubbing too hard, a good polishing protects them from the formation of deposits, due to combustion.
Never use liquid detergent to clean brass.
Rinse the covers and dry them thoroughly before reinstalling them.
Important note: Always check that the gas outlet holes are not blocked.
The simmering plate (or The Cast Iron French Plaque
- large square or rec-
tangular surface, with concentric circles)
is made of cast iron
, a material recognised for its excel-
lent heat distribution properties.
Do not clean the plate with water, as this can cause rust.
Raw cast iron is a perfect cooking tool but naturally patinas with oxygen and heat. Over time the French
Top will darken to about the color of the burner grates.
The French Top should be seasoned occasionally, which is done with plain (food-safe) mineral oil. Warm
the plaque slightly and generously apply mineral oil to the exposed cast iron. Let the mineral oil absorb
slowly (overnight is okay). This seasoning process will help the cast iron to mature evenly.
To clean spills from the cast iron, use a dry cloth to wipe the surface clean. If stains are still visible, try using
Scotch-Brite® pads, a hand-sander or a very fine grade of sandpaper may be used to gently rub with the
grain of the cast iron.
It is imperative to rub WITH the grain or the cast iron will be permanently scarred!
Please note that the patina will return upon next use. Be sure to remove the cast iron from the cook top
so the stainless steel surrounding the top is not damaged.
