01 I PREPARATION OF INGREDIENTS
Place 100 g of sugar with 1 tbsp of water in a
pan and heat and watch closely until you obtain
a light-colored caramel.
Put in the bottom of the buttered canister.
Reduce amaretti biscuits into rough powder.
Whisk the eggs with the remaining 60 g of
sugar. Add the cocoa, whisk. Add the amaretti
and the Amaretto. Alcohol vapours are
flammable. To evacuate them bring to the boil
for at least 2 mins and do not cover. Then add
milk. Mix and pour in estouffin basket. Put the
lid on.
02 I YOUR PRESSURE COOKER
DOES EVERYTHING
Pour 3 eco doses of water (75 cl) into the
pressure cooker, position the tripod then the
estouffin basket. Close the pressure cooker. As
soon as the steam escapes, lower the source
of heat and allow to cook according to time
indicated.
03 I THE FINISHING TOUCH
Open and place in fridge for a few hours before
turning over the bunet in a deep dish.

Mix the egg whites without beating with
the sugar. Add the cream, then the seeds
of the vanilla pod. Mix and pour into 4
small ramekins.
02 I YOUR PRESSURE COOKER
DOES EVERYTHING
Pour 2 eco doses of water (50 cl) into
the pressure cooker, lay out the steam
basket containing the 4 ramekins. Close
the pressure cooker. As soon as the steam
escapes, lower the source of heat, and let
cook for the time indicated.
03 I THE FINISHING TOUCH
Let cool before placing in the fridge for a
few hours to serve well chilled.
