Walnut muffins
Makes 12
Ingredients
100 g raisins
5 tbsp water
150 g butter
150 g caster sugar
3 tsp vanilla sugar
3 eggs
150 g plain flour
1 tsp baking powder
125 g walnuts, roughly chopped
12 muffin cases (7-8 cm

Method
Drizzle the water over the raisins and
steep for approx. 30 minutes.
Beat the butter until creamy, then
gradually mix in the caster sugar, the
vanilla sugar and the eggs. Sift the flour
with the baking powder and fold into
the mixture together with the walnuts.
Finally add the soaked raisins.
Using two spoons drop the mixture into
muffin cases, place on the rack in the
oven and bake until golden.
