Butter biscuits
Makes 40
Ingredients
150 g softened butter
140 g sugar
1/2 egg
Zest of one lemon
180 g plain flour
For glazing
Rest of the egg
Method
Beat the butter and sugar until creamy.
Beat the egg and stir half into the
mixture, then add the flour and lemon
zest.
Spread the mixture over 2/3 of the glass
tray. Brush with the rest of the egg and
bake until golden.
Cut into diamond shapes, taking care
not to break the biscuits as they are
very crumbly.
