Saddle of hare
Serves 4
Ingredients
Saddle of hare (approx. 750 g)
Salt
Pepper
50 g streaky bacon, sliced
2 bay leaves
6 juniper berries
100 ml double cream
150-400 ml meat stock
Cornflour
Method
Remove any outer membrane from the
hare and season with salt and pepper.
Wrap in slices of bacon, and place in a
roasting dish. Scatter the berries and
bay leaves over the top. Cover and
roast for approx. 20 minutes.
Turn the meat over, add the cream and
the stock and finish roasting without the
lid.
Transfer the meat to a warm serving
dish, and carve, removing the bones.
Deglaze the juices from the meat with
the water and thicken with a little
cornflour.
