Courgette bake
Serves 4
Ingredients
2 courgettes
1 onion, finely diced
10 g butter
1 tsp oregano or marjoram, finely
chopped
1 slice of white bread, finely diced
200 g goats' cheese
1 tbsp soured cream
Salt
Freshly ground black pepper
Method
Halve the courgettes lengthways and
scoop out the centres with a teaspoon.
Chop the flesh roughly. Sauté the onion
gently in the butter and add the flesh
from the scooped out courgettes and
the herbs.
Crumble the goats' cheese and blend
with the soured cream. Stir into the
onion mixture with the bread and
season with salt and pepper.
Arrange the courgette halves in a
suitable microwave safe dish, spoon in
the filling and bake uncovered.
