Fillet of plaice on a bed of spinach
Serves 2
Ingredients
300 g plaice fillet
2 tbsp lemon juice
1 onion, diced
20 g butter
300 g frozen spinach
20 g butter
20 g plain flour
250 ml vegetable stock
1 egg yolk
100 ml double cream
150 g grated Cheddar cheese
Salt
Pepper
Nutmeg
Method
Drizzle the plaice fillets with lemon juice
and set to one side for 10 minutes. Pat
dry and season with salt and pepper.
Defrost the spinach at 600 W for
approx. 6 minutes, then drain
thoroughly, pressng to remove excess
liquid.
Sauté the onions in the butter until
golden, add the spinach and cook for a
further 5 minutes, then set aside. In a
separate dish, melt the rest of the butter
and stir in the flour. Add the stock,
continuing to stir. Remove from the heat
and mix in the cheese and the egg and
cream. Season with salt, pepper and
grated nutmeg.
Spread the spinach over the bottom of
a suitable shallow dish. Arrange the
plaice on top and pour the sauce over.
Bake uncovered.
