2 tbsp., Butter - 1 tsp., Oil - 1 tsp., Lemon Juice - ½ tsp., Salt

Instructions
In a bowl add vegetables and cook. When beep, add all the ingredients
except salt & lemon. Add lemon and salt at serving time

Stuffed
Brinjals
600-700 g
baby brinjals- 500 g, roasted peanuts- ½ cup, roasted sesame
seeds- 2 tbsp., roasted dessicated coconut- 1 cup, garlic cloves
- 4-5, chopped, ginger - ½ inch, onion chopped - 1 large,
tomato chopped – 1, turmeric powder/haldi- ½ tsp., red chili
powder- ½ tsp., garam masala powder- ¼ tsp., coriander
powder/dhania powder - ½ tsp., cumin seeds powder - ½
tsp., a pinch of asafoetida/hing (optional), oil - 2 tbsp., water-
2 cups, salt
Instructions
Make Paste:
Roasted peanuts, half chopped onion, roasted sesame seeds, roasted
dessicated coconut, garlic, salt, coriander powder, garam masala, cumin
seeds powder, red chilli powder.
Slit the brinjals from bottom in four equal portions. Stuff the brinjals with
masal paste.
In a microwave safe glass dish add oil chopped onion, asafetida, ginger and
cook. When beep, add tomatoes, dry masala, brinjals, water and cook.
