The default Delta value is 50. This value is adjustable by accessing the settings menu and the
selection range is between 20 and 80. The lower the value, the smaller the temperature difference
between the cooking chamber and the core, allowing for slower and more delicate cooking.
2.9 Humidity
Humidity control selector. The control screen shows the humidity selected on the On
screen. To set the desired humidity, select the selector with the knob.
To confirm, press the humidity button again or press the knob. The buttons are only
enabled in Convection and Combination operating mode, as the humidity value is fixed at
100% in Steam mode.
Selected humidity range and value. The selection is made in
intervals of 10%.
 Concept: Steam is generated by injecting water onto the heating elements in the chamber, as
it does not have a boiler.

Concept Plus: Steam is generated using a boiler and heating elements.
It should be noted that in Convection mode the oven never generates steam, it only manages the
steam produced by the food.
2.10 Fan speed
Fan speed selector. The selected fan speed is shown on the control display. When the
selector is pressed, the fan speed can be adjusted with the knob. The higher the fan
speed, the higher the speed of the air flow.
It is recommended to use lower speed for confectionery and small, delicate foods.
