Baking tray
Fish:
4 cod fillets, approx. 180 g each
2 tbsp lemon juice
Sea salt
Pepper, freshly ground
100 g herb butter, spreadable
1 organic lemon
40 g Parmesan, freshly grated
25 g breadcrumbs
2 tbsp flour
In addition:
Greaseproof paper
Per serving

Preparation

Rinse the cod fillets briefly under cold water
and pat dry with kitchen towel. Drizzle with lemon
juice and season with salt and pepper.

Beat the herb butter with a whisk until light
and fluffy. Wash the lemon with hot water, dry it
and grate the peel. Add to the herb butter
together with the Parmesan and breadcrumbs
and mix everything thoroughly.

Line the baking tray with greaseproof paper.

Roll the fish in flour, place onto the baking tray
and brush with a coating of the herb butter
mixture.

Grill the fillets as indicated.
