7.0H SETTING AND MODIFICATION OF THE CORE PROBE TEMPERATURE DURING A PHASE IN AN AUTOMATIC COOKING CYCLE.
To modify the temperature of the core probe, turn the encoder knob to the right to increase the value and on the left to decrease it.
If you selected for example a phase with combined cooking and a temperature of 80°C on the display (O) of the skewer, by pressing the encoder knob
you store the value and you move the cursor on the parameter (percentage of humidity) display (M) which is flashing, without taking into consideration
the cooking time on the display (N) which will be switched off.
The temperature you can select for the core probe is that one described at the paragraphs regarding the manual programming.
If you select the 2 central lines (
- -
) on the display of the skewer (O), located before the minimum value for the core probe, the cooking cycle will be
done using the cooking time and not the skewer.( see next paragraph). By pressing the encoder knob you confirm the timed cooking and move the
cursor on the flashing display of the time (N).
NOTE: if the temperature is shown in °F , you will see the value of the core probe on the display (N), while the display (O) will be switched off; to select
a cooking cycle using time select and confirm the symbol

(3 lines) on the display N, the cooking time will be selected on the same display.
7.0I SETTING AND MODIFICATION OF Delta T DURING A PHASE IN AN AUTOMATIC COOKING PROGRAM.
Delta T (
Δ
t) is a parameter, whose value can be expressed in °C o °F, and the temperature range is between 30 and 150°C.
If this function is started, the temperature of the cooking chamber is related to
Δ
t, To clarify (
Δ
t) = cooking chamber temperature – real temperature in
the core of the food, measured each 10 seconds by the skewer.
Thanks to this function the cooking chamber is heated following the measurements of the skewer;
maintaining a steady difference between chamber temperature and the temperature in the core of the
product. This is different from a cooking cycle with normal core probe and fixed temperature.
This function is particularly useful while cooking large pieces of meat so that the loss of salts and
vitamins is very reduced; needless to say that the difference between the cooking chamber temperature
and that one in the core of the product must be steady.
The smaller the difference between the 2 temperatures is, the better will be the cooking results, the food will be more tasty and the weight loss will be
reduced.
The function (
Δ
t) can be started only if you select a temperature for core probe cooking through the skewer.
On the second line of the LCD display the name of the program will be replaced by the message “
DELTA T OK
.
Use the encoder knob and select (OK) to confirm this function and (NO) to refuse it. If you select (OK) the
Δ
t led will switch on, (H1) and in addition to
this the display of the cooking chamber temperature (L) will be flashing.
Turn the encoder knob on the temperature value desired (ex.
Δ
t 50°C), press the knob, you store the new value and move the cursor following
parameter (percentage of humidity) if you have selected a combination cycle. If not the oven is ready to start, no display is flashing.
As for the traditional cooking cycle, when the core probe reaches the temperature selected, the cycle stops without any time limit.
To cancel the function, press for a second time the button
Δ
t (H), and the led (H1) will be switched off.
7.0L SETTING AND MODIFICATION OF THE COOKING TIME DURING A PHASE OF AN AUTOMATIC COOKING PROGRAM.
To modify the cooking time turn the encoder knob to the right to increase the value and to the left to decrease it. Once you reach the
time desired (ex. 00h:40’), press the encoder knob to store the value and move the programming on the parameter (PERCENTAGE
OF HUMIDITY) the display (M) will be flashing.
The time range you can select on the timer (N) is between 1 minute (00:01) and 9 ore, 59 minutes(09:59)
To interrupt the cooking cycle, you just need to press the button (C) start/stop.
If you modify the timer value, you will automatically update the total time of the cooking cycle situated on the display at the top on the right
hand side.
7.0M SETTING AND MODIFICATION OF THE PERCENTAGE OF HUMIDITY DURING A PHASE OF AN AUTOMATIC COOKING PROGRAM.
The modification of the percentage of humidity can be done on the display (M) only if you selected a combined cycle.
The percentage of humidity you can select on the display (M) varies between 1% and 99%.
Turn the encoder knob to the right to increase the percentage and to the left to decrease it. Once you have reached the percentage desired (ex. 80% )
press the knob to store the value and move to the FOLLOWING PHASE.
NOTE 1: if there is only one single cooking phase (1/1) the electronic system will wait for the oven to start the cooking cycle
NOTE 2: if there is more than one phase, in this case repeat sequentially all instructions above
described for each single phase of which the program is made of.
To modify the name of the program and the relative number of phases, you have to put the oven in the
condition ready to start and then press the button (PRG).
NOTE 3: At any time you can stop programming by pressing the button (PRG). The electronic system
will store only the values, that have been modified and confirmed by means of the encoder knob, for the remaining values, if not confirmed, the
electronic system will put automatically the defaults values.
NOTE 4: in case you modify the number of the cooking phases, the electronic system reacts as follows:
If the number of the phases has been reduced, the electronic system store only the values of the remained phases;
if the number of the phases has been increased, the system will put the defaults value, of course you can modify them.
7.0N SETTING AND MODIFICATION OF THE FUNCTION COOK & HOLD IN THE AUTOMATIC COOKING PROGRAM.
The cook & hold function allows you to keep the food at a constant temperature, immediately after a cooking cycle.
This function is proposed automatically if in the last phase you selected COMBINATION or CONVECTION modes.
To confirm this function you have to press the encoder knob on the sign OK and then select on the display (L) a temperature varying from 20 to 50°C.
If in the last phase you selected the COMBINATION mode you can also confirm by means of the
encoder knob a percentage of humidity between 10 and 50%.
If the function cook & hold has been started, the symbol C&H will appear on the 16th letter of the recipe
name.
NOTE: to cancel the function cook & hold in a program with more phases, you have to program once
again the last cooking phase.
In case in an automatic cooking program you put a single phase of the function cook & hold , on the display it will appear the sign cook & hold.
