Warm the cream up and then add

Place the orange zest, cut into thin
strips, into a saucepan along with
the water, sugar and a few drops of
lemon juice. Bring to the boil and
leave to cook for just one minute.
Pour the single cream into this
mixture and mix well. Season with
curry and put to one side. Mix the
yoghurt (or the ferment) with a little
milk. Add the milk powder. Add the
rest of the milk and the flavoured
cream gradually. Mix well.
Pour the mixture into the jars and
place them in the yoghurt maker
(8 hours).
To serve, you can offer these
yoghurts along with carrot sticks, for
an aperitif.
