Dough production
Devices: In spiral kneader with centre bar
Step 1:
Mix sugar and butter for ca. 2 min.
Step 2:
Add egg, egg yolk and flavors and mix for 1.5 min.
Step 3:
Add nut semolina and mix for ca. 1 min.
Step 4:
Add flour and knead for ca. 3.5 min.
Step 5:
Store dough in a cool place
Step 6:
Knead well before further processing
Note: Times may vary depending on the amount of dough/ volume of the kneading vessel.
