Filtering Cooking Oil
1. After cooking the preset number of loads
[FILTER COUNT]
, an alarm will sound.

filtering, this alarm reminder will occur after each
subsequent load cooked until oil is filtered.

until a filtering cycle is performed.
3. Place the Selector Switch

Power Switch must remain ON.
4. Open the Cabinet Door, disconnect the Filter Pan Quick-
Disconnect Hose

and remove the Filter Pan

from
the unit.
5. Remove Pan Cover

to confirm that the Filter Media is
installed correctly (1 sheet of Filter Paper).
6. Distribute approx. 5 oz. of Filter Powder
(1-pack, Giles
#72004)
over filter media surface. It is important that a
suitable filter aid be used for removal of soluble impurities
and reconditioning of the oil.
7. Replace Filter Pan Cover

and reposition the Filter Pan
under the unit. Reconnect the Filter Pan Quick Disconnect

DO NOT attempt to filter cold, congealed oil. The Filter Pump can clog and be damaged.
Oil must be a minimum of 200°F (93°C) before attempting to pump.
This section explains use of the built-in Oil Filtration System for filtering and reconditioning used cooking oil. The
system circulates oil through filter media in the Filter Pan and back to the Fry Pot. Routinely performing procedure
can increase useful life of cooking oil by as much as 50%.
The Controller’s
[FORCE FILTER]
feature, in conjunction with a
[FISH FILTER] Menu Item setting (see
Section 5.1.4.1,
Editing a Menu Item Preset
),
can force Users to filter Fryer oil according to a set routine. Controller can place the
Fryer into
FILTER MODE
after a certain number
(FILTER COUNT)
of cook cycles have been completed. When feature
is turned
[ON]
, the Fryer will be
locked-out to prevent further operation
, after count is exceeded, until a filtering
cycle is performed. When feature is turned
[OFF]
, Controller will
only prompt
User to filter oil, after count is
exceeded. The prompting continues after every subsequent load until filtering is performed.

Factory-default: FORCE FILTER = [ON] ... FILTER COUNT=4 ... FISH
FILTER=[OFF].
A
FORCE FILTER SNOOZE
setting can allow one (1) additional cook cycle after the filter count is exceeded.

Setting may be changed in
USER SETTINGS
.
Always wear thermal protection, such as Gloves or Oven Mitts, while performing the
filtering process. Fryer parts inside the cabinet will be extremely HOT!
