16.3 • Cooking with ALTERNATING FANS
This is a “PLUS” that can be turned on in
any cooking cycle.
This function is useful for large items of food,
fresh and delicate meats o to defrost.
The ventilation during the time without
heating works alternately on a time basis
so that the heat and humidity in the oven
r e m a i n w e l l m i x e d t o e n s u r e o p t i m a l
conditions.
How to set:

PERMANENT STOP (light of key 15 off),
press key 18, use the knob to select the
last cycle of the program, the cycle will
appear blinking on display 9, press key 16,
display 9 will show “FINISHING”, turn the
knob, the display shows INTERMITT.FAN,
f r o m “ I N T E R M I T T . F A N O F F ” ( f u n c t i o n
n o t e n a b l e d ) t o “ I N T E R M I T T . F A N O N ” ,
(Intermittent fan on) press key 19 to confirm
the selection. If the stored program includes
using the “ALTERNATING FANS” function,”
display 9 will show the letter “A” reminding
you that the cooking includes using the
function.

REHEAT PROGRAM
INTRODUCTORY
NOTE
Reheating plays a significant role in an
organized system of kitchen management:
cooking
cooling
conserving
reheating
service.
The reheat program can be used for foods
either stored in containers or prepared on
plates.
The setting is done as an ordinary recipe
(see recipe list). This is particularly suited
for reheating food on a plate in order to
prevent condensation on the plate or for
foods requiring a supply of humidity in the
oven for them to keep their characteristics.
