
INTRODUCTORY NOTE
The Clima humidity control system makes
it possible to keep a constant level of
humidity in the oven when cooking by
convection or with the combination cycle.
It performs a double function, on the one
hand introducing moisture, and on the other
extracting moisture from the food when a
set value is exceeded.
Especially advantageous for fresh products
that cannot have the same moisture content
from one day to another, but which when
cooked will always have the same aspect
and consistency.
This system permits obtaining the same
cooking result for the same food cooked in
different quantities.

15.1 • COOKING WITH THE CLIMA
HUMIDITY CONTROL SYSTEM

Convection or Combination.
Once the oven or core probe temperature
has been set (as described under the
relevant headings), press the keys 13 to set
the desired “CLIMA” value, from 1 (very
dry) to 99 (very humid). Place the food in
the oven and, if the core probe is being
used, insert the probe (see “Hints on using
the core probe”), connect the core probe to
connection 27 and proceed according to the
cooking mode selected.
Advice
Defining the CLIMA value requires a certain
amount of practical experience.
Nonetheless, it is impossible to commit a
c a t a s t r o p h i c e r r o r , a n d t h i s f u n c t i o n
undoubtedly enhances the appearance of
the food.
Ideal
for:
foods that tend to dry up, or small items
o r f o o d s t h a t r e l e a s e e x c e s s h u m i d i t y
(e.g. roast chicken) and when reheating
especially on a plate.
Advantages
Repeatable results, even when foods are
cooked together with others having different
characteristics.
CLIMA + PLUS
When setting the program, pressing key 13
and then key 16 takes you to the additional
CLIMA functions that permit programming
the oven steam vent as follows:
OPEN VENT for the entire cooking cycle,
ideal to extract the excess steam/humidity
created by particularly moist foods.
OPEN VENT by timing ... X minutes before
the end of the cycle, ideal to obtain the end
result of drying the food.
