
INTRODUCTORY
NOTE
The ∆t function allows the core probe to
be used while maintaining a constant
difference between the temperature at the
core and the temperature in the oven.
With the ∆t system, food need not be
assailed by high temperatures, but instead
can be uniformly cooked and remain tender,
while loss in weight is also considerably
reduced.
14.1 • COOKING WITH THE ∆T SYSTEM
Once oven temperature and the core probe
temperature are set (as shown in relative
chapters), Press key 18 and the key 16 for
manual cooking with a single cycle.
Rotate knob until “DELTA T” is shown and
confirm selection by pressing knob or key 19
ENTER.
Rotate knob until “DELTA T ON” is shown and
confirm selection by pressing knob or key 19
ENTER.
Display 6 will blink, set desired ∆T value and
confirm selection by pressing knob or key 19
ENTER.
Insert the probe into the food, same way as
in “Setting the core probe” chapter, connect
the probe to connection 27 and proceed
depending on cooking method chosen.
If you want to turn off the function, just press
key 16, rotate knob until “DELTA T” is shown
and confirm selection by pressing the knob or
key 19 ENTER.
Rotate knob until “DELTA T OFF” is shown and
confirm by pressing knob or key 19 ENTER.
When started, the oven rapidly heats to
the ∆T value + the temperature already
e x i s t i n g a t t h e c o r e o f t h e f o o d . T h e
oven will then be regulated in such a
way that the difference between the two
temperatures remains constant, i.e. equal
to the determined ∆T value.
