11.6 Ventilation Hood
A ventilation hood is not absolutely
stipulated for the operation of a combi
steamer. If a hood is installed, the following
should be noted:
•
Observe the VDI guidelines 2052 as
well as those guidelines and
regulations of the building commission
in each country.
•
Install the grease filters in the
protruding area of the hood.
•
The grease filters should be removed
and cleaned in a dishwasher regularly.
Note the manufacturer’s information.
•
An adequate amount of incoming air
must be ensured when operating the
ventilation hood (
→
see chart, Chapter
12).
•
Check the assembly of the ventilation
hood on a unit to see if it is tip proof.
This is especially important if the combi
steamer is assembled onto a rolling
stand.
Note that for transporting the
combinaiton oven steamer, this must
be fastened to the stand. Other than
when transporting, the hood should be
disassembled.
•
Always switch the hood on when the
combi steamer is in operation.
Otherwise, condensation can collect in
the unit.
•
If a ventialtion hood is being installed,
we recommend the original combi
steamer ventilation hood (air exhaust
hood) Type 3416801 for unit sizes 6.10
and 10.10 and Type 3416821 for unit
sizes 6.20 and 10.20.
•
Likewise, a condensation hood is
available by request. The condensation
hood is without air ventilation pipes and
connects to a cold water inlet
(
∅
15 mm) and a water drain
(
∅
28 mm) underneath the hood.
•
