Hearty Chili
Serves 4
2-‐pounds ground beef
½-‐pound hot Italian sausage, remove casings
2 medium onions, finely chopped
2 red bell peppers, chopped
4 cloves garlic, finely chopped
3 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon kosher salt
1 teaspoon black pepper
1 (24-‐ounce) can crushed tomatoes
1 (24-‐ounce) can diced tomatoes, with juice
1 (8-‐ounce) can tomato sauce
1 (15-‐ounce) can pinto beans, drained and rinsed
1 (15-‐ounce) can red kidney beans, drained and rinsed
Set pressure cooker dial to 15 minutes, add beef and sausage. S@r and
brown, while breaking up with back of wooden spoon un@l crumbly and
cooked through.
Drain off any excess fat and add onions, bell peppers and garlic. Sauté
for 2-‐3 minutes, then sprinkle in chili powder, cumin, salt and pepper.
S@r in crushed tomatoes, diced tomatoes, tomato sauce, pinto beans
and kidney beans.
Secure lid and set dial for 15 minutes.
When cook @me is complete, and pressure is fully released, carefully
open lid.
Serve warm.
