Harvest Stew
Serves 4-‐6
2 cups cubed Yukon gold potatoes
2 cups peeled, cubed sweet potatoes
2 cups peeled, cubed bulernut squash
1 cup peeled, cubed rutabaga
1 cup peeled, diced carrots
1 cup sliced celery
1 cup diced onion
2 cloves garlic, minced
¼ teaspoon chopped fresh sage
2 cups apple cider
2 cups vegetable stock
1 Granny Smith apple, thinly sliced
1 teaspoon kosher salt
½ teaspoon black pepper
Add all ingredients to pressure cooker, secure lid and set dial to 10
minutes.
When cook @me is complete, and pressure is full released, carefully
open lid.
Serve warm.
