4.2 Uneven forming due to sticky doughs:
The biscuits have a cracked surface:
The biscuits are formed, but have cracks or even holes on
the surface and the dough sticks in the forming roller.
In general, no dough should stick to the surface
of the forming roller!
Because what sticks in the forming roller is
missing in the biscuit.
Reason:
Sticking of the dough in the forming roller can have many
causes:
1) the dough has too little binding
2) the dough is too warm or too cold
3) the forming roller is not warm enough for doughs that
need to be processed with roller heating
4) the dough is too sticky because of ingredients such as
honey or soft margarine.
