14.4 Troubleshooting and fault rectification
1) The dough sticks in the
pattern roller. 1) The dough has too little binding
because it has not been kneaded
long enough.
2) The dough has too little binding
because it has just been freshly
prepared.
3) The dough has too little binding
because the recipe is not suitable
for the machine.
1) It may be necessary to knead the dough
a little longer.
2) Let the dough rest for about 5-8
hours, cooled and
covered with a linen cloth. Before
processing, knead the dough
once again briefly.
3) Choose a recipe from
our Janssen recipe book
that is similar to your recipe.
Prepare this recipe from the recipe
book and 1-2 other
recipes that are similar to your recipe
in smaller quantities (approx.
10 kg) and test them in the
machine.
