Cut both ends of red onion: peel skin.
Pour 1/4 cup Italian dressing over
onion and place on 1-inch rack. Cook
at 400 degrees for 10 minutes. Use
Italian dressing to dip onion. Serve
immediately.

Zucchini & Onions Au Gratin
1 large yellow onion
1 medium zucchini
1/2 teaspoon salt
1/ 8 teaspoon pepper
1 tablespoon olive oil
1/2 cup shredded cheddar cheese
salt & pepper to taste
Chop onion into 1/2-inch pieces. Place
in liner pan. Drizzle with olive oil. Cook
at 375 degrees for 6-7 minutes, stirring
halfway through. Slice zucchini into
3/8-inch slices. Layer on top of onions.
Season with salt and pepper. Cook at
375 degrees for 3 minutes. Sprinkle with
cheese and cook for an additional 2
minutes at 375 degrees.

Italian Onions
1 large red onion
Italian dressing
Green Beans Almondine
12 ounces french green beans,
trimmed and rinsed
2 tablespoons olive oil
juice from 2 fresh lemons
1/2 cup sliced almonds
2 tablespoons butter, melted
Place green beans in 8x8-inch shallow
baking dish. Drizzle oil and lemon juice
over beans. Cook at 400 degrees for 4-5
minutes on 1-inch rack. Top beans with
almonds. Cook at 400 degrees for an
additional 2 minutes. Serve immediately.
(6-8 servings)
Place all wet ingredients in bowl and add
carrots. Season with salt and pepper.
Place in oven-safe pan. Place baking
pan on 1-inch rack. Cook at 375 degrees
for 8 minutes. Stir carrots and continue
cooking for 2 minutes at 375 degrees.

Balsamic Glazed Carrots
1 pound fresh carrots, washed
and cut into thin, round slices
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
salt & pepper to taste

NOTE:
Use 10-inch baking pan or round
casserole dish that fits in NuWave. Keep
in mind that if pan is bigger, less cook time
is required. If pan is deeper, cook longer.
1 package Jiffy corn bread mix
1 (15-ounce) can regular canned corn,
drained
1 (15 ounce) can cream-style corn,
drained
1 1/2 cup shredded cheddar cheese
1 teaspoon salt
4 eggs, beaten
1/4 cup sugar
Mix all ingredients together. Pour into
10-inch baking pan that has been
sprayed with non-stick spray. Place on
1-inch rack. Cook at 375 degrees for 18-
20 minutes. When timer goes off, let sit
with dome lid on for 2 minutes.
Place all ingredients for caramelized
onions in oven-safe baking dish. Bake at
420 degrees for 5-6 minutes.
