PRODUCT LIMITATIONS
THE MODEL 2100 IS NOT SUITED TO
CUT HARD, FROZEN PRODUCT. Frozen
product should be tempered to approxi-
mately 27–35°F (-2.8–1.7°C). For best
results, fresh and cooked meat should be
tempered to approximately 35–40°
(1.7–4.4°C).
PRODUCTS WHICH ARE EXPLOSIVE
or create a potentially explosive atmos-
phere should not be processed by this
machine. A potentially explosive atmos-
phere could be created if processing your
product creates fumes or dust in sufficient
concentrations.
NOISE EMISSION
WARNING: The sound pressure
level produced by this machine is likely
to exceed 85 dB(A). Use adequate
hearing protection.
APPLICATIONS
The Model 2100 features large hopper
capacity and positive product feeding for cut-
ting tempered frozen, fresh and/or cooked
meat through a wide range of sizes. The
Model 2100 allows the user to utilize all types
of meat for flaked and formed products, as
well as other applications including bakery
rework. Several types of impellers and a wide
range of cutting heads are available for tailor-
made particle size requirements.
