DECEDANT CHOCOLATE MOUSSE
Ingredients
3 eggs
100g of milk
100g of unsalted butter, softened at room temperature
150g of good quality chocolate, chopped
½ tsp lemon juice
pinch of salt
75g of caster sugar
Preparation
1) Separate the yolks from the whites.
2) Pour milk, egg yolks, butter and sugar into the bowl and mix for

3) Add chocolate and whilst holding the measuring cover blend for

(Holding the measuring cover in place will prevent the cup from lifting during blending)
Transfer to a bowl and set aside.
4) Wash and dry the bowl thoroughly. Put mixing tool into place, add egg whites, lemon juice and salt.

5) Gently fold egg whites into chocolate mixture and pour into serving cups.
Cool in the refrigerator until set.
Notes
Serve mousse garnished with whipped cream or chocolate shavings.
This mousse can also be used in pies, cakes and pastries.
