WINTER VEGETABLE SOUP
Ingredients
1 onion, quartered
1 clove garlic
1 tbsp mixed herbs
2 potatoes, roughly chopped
1 zucchini, roughly chopped
1 carrots, roughly chopped
200g pumpkin, roughly chopped
200g crushed tomatoes
1 can cannelloni beans, drained and washed
50g oil
100g vegetable stock
salt and pepper, to taste
