INSTALLATION OF THE APPLIANCE
All installation stages must be considered right
from production of the general layout.
Before starting these stages, as well as deciding
the place of installation, if necessary, the person
authorised to carry out these operations must or-
ganise a “safety plan” to protect the people direct-
ly involved, and he must also ensure strict compli-
ance with all legal requirements, especially those
relating to mobile work-sites.
The place of installation must have all the con-
nections needed to supply the appliance and
dispose of the production residues, must be suit-
ably lit and must meet all legal health and hy-
giene requirements to prevent the contamina-
tion of the foods.
Install in accordance with the relevant legisla-
tion, regulations and specifi cations in the coun-
try of use.
ROOM VENTILATION
Caution - Warning
Use the SMOK only in the presence of forced
ventilation and aeration to prevent stagna-
tion of smoke and other pollutants in the en-
vironment. The hourly fl ow rate of the venti-
lation system must be at least 2 m3/h for each
kW referred to the overall nominal thermal
capacity of the oven which the SMOK is con-
nected to.
Caution - Warning
The SMOK may only operate below a hood
and in rooms with adequate volume com-
plying with the applicable regulations in for-
ce. Smoke leaks from the smoker or from the
oven vent is normal during operation.
