6.4. - Air-break.
The air-break is a tank that collects the water that comes into the machine from
mains. The capacity of this tank is about 300 cc and its main purpose is to store water
at atmospheric pressure and ambient temperature. This ensures that the supply of
water for the preparation of soluble drinks is constant. If the water were taken directly
from water mains, changes in pressure would create deviations in the accounting of the
water used in each sale. This tank feeds the pressure boiler through a food-grade
silicone tube using a pressure pump.
It is fitted with a control system to monitor water level using a floater. When the
desired water level is reached, the floater blocks a light beam generated by the
photocell system and sends a command to shut off the water intake from mains. When
a new sale is made, the floater descends, the light beam is unblocked and the water
intake solenoid valve opens until the air-break fills up again.
This tank also has a safety system operated by a microswitch which is only closed
in case the abovementioned water level control system fails. Water intake is closed
before the water in the air-break reaches the runoff level, putting the machine out of
service (figure 6.04).
Should both water level mentioned above fail, the water will reach the runoff level
and empty into the waste bin. There is another control system in the waste bin to
prevent uncontrolled water intake from mains. This system consists of a floater which
puts the machine out of service when the bin is full.
The reduced capacity of the air-break allows for precise control of the amount of
water present in the water circuit of the machine, so that in general, after each sale, the
water level is below the minimum and requires water from mains. This way, since the
amount of water needed is very small (that corresponding to one sale) the water
temperature in the boiler is allowed to experience very small fluctuations.

The machine is programmed so that, should the air-break water level not
appear to descend during consecutive sales totalling 200 cc of water, so no water
is taken from mains, the machine will be put out of service (air-break floater
stuck). To solve this problem, lower the floater manually and turn the machine on
again.
