Ingredients
10 large flat cap
mushrooms
1 tsp olive oil
1/4
onion, finely chop-
ped
2 large garlic cloves,
peeled and chopped
1/2
tsp Basil
1/2
tsp Oregano
1 tbsp Fresh Parsley,
chopped
50g fresh bread-
crumbs
1/2
tsp pepper
1 tbsp soy sauce
1 tbsp sherry
Preparation
Gently clean the mushrooms with a damp cloth,
remove the stems and chop them finely.
Put the oil into a bowl with the onion cook on
microwave 1000 watts for 5 mins. Add the garlic
and cook for 1 minute on microwave 1000 watts.
Add the chopped mushroom stems and herbs,
cook for a further 5 minutes on microwave
1000 watts. Add the breadcrumbs, soy sauce and
sherry and heat once more on microwave 1000
watts for 2 minutes. Pre-heat the oven empty on
convection 150°C. Add seasoning if desired. Place
mushroom caps onto a lightly greased enamel
shelf. Fill each mushroom cap with the bread-
crumb mixture. Bake for 15 minutes and serve
immediately.
