Ingredients
450g White bread flour
1 tbsp salt
30g fresh yeast, broken
into small pieces
1 tsp sugar
125g butter or margari-
ne
600ml full fat milk
1 egg yolk
Preparation
Mix flour and salt in a bowl, add the yeast, sugar,
butter and milk, knead into a soft dough for
about 10 minutes.
Cut dough into four equal pieces, roll each piece
into a sausage shape of approx. 20cm in length.
Put the four rolls next to each other and press
the tops together firmly.
Put the first roll on the left across the second roll
on the right. Then put the first roll on the right
across the second roll on the left. Continue until
no more dough is left. Press the ends together
and fold beneath the bread.
Put the dough onto the enamel shelf, which
should be covered with baking paper and brus-
hed with water.
Allow the plait to rise for about 1 hour in a warm
place.
Pre-heat the oven empty on convection 200°C.
Brush the top with the egg yolk. Bake for 45 to
55 minutes.

Bread and Pizza
Ingredients
500g Strong white flour
1/2
cube fresh yeast
4 tbsp sugar
1
1/2
tbsp salt
1 egg
90g butter
20ml warm milk
Preparation
Prepare the dough by mixing the flour, yeast, salt
and sugar in a bowl and mix well. Add the egg a
little at a time, and the warm milk to make a
dough.
Knead the dough for 5 minutes. Cover and leave
to prove for 1 hour 30 minutes in a warm place.
Turn the dough out onto a floured surface. Cut
into two pieces and these into two again.
Separate and roll each piece into four. Roll each
into a ball shape.
Place 8 balls on the metal tray and 8 on the ena-
mel shelf.
Put the trays in the oven and prove on convection
40°C for 1 hour and 30 minutes.
Allow them to double in size, remove from the
oven. Pre-heat the oven on convection 220°C.
When the oven has pre-heated put the metal tray
on glass tray and enamel shelf in position and
cook for 11-12 minutes.
Warm from chill by placing under the grill for a
few minutes. The rolls will keep fresh in a plastic
bag for several days.
