PREVENTIVE MAINTENANCE:
Minimal maintenance is required on a gas fryer because of its design and the materials
used in the manufacturing process. However, some preventive maintenance and inspection must be performed periodically to
prevent break downs which could curtail food sales. Any preventive maintenance or inspection should be accomplished with
CAUTION
while the fryer is in operation since
HOT
liquid shortening could cause severe burns. If service or repair is re-
quired, all gas and electric power
MUST BE TURNED OFF PRIOR TO
performing that service or repair.
