A bacterial test proved too 

many bacteria in ice cream

a) Sealing missing or not

properly installed

a) Too many bacteria in the

mix.

b) Machine not

sufficiently cleaned

and sanitized.

a) Check and proceed as

necessary

a) Improve preparation

procedure by sanitizing all

the containers, spoons, etc.

and have the mix analyzed

before it is put into the

machine.

b) Empty the machine and

wash it thoroughly.

Sanitize as indicated under

chapter 6 of this manual.
