4.3 ICE CREAM PRODUCTION (FREEZING CYCLE)
After cleaning, sanitizing and fully rinsing the machine immediately before use - pursuant to
sec. 6 Cleaning - take mix from pasteurizer, pour the required quantity into hopper, respecting
minimum and maximum quantities as provided in paragraph 1.2.2.
Before pouring the mix, make sure that the spigot door and the ice cream outfeed door are
perfectly closed.
Press the
FREEZING
button and select the desired cyclewith the
INCREASE
and
DECREASE
buttons.
At the end of freezing cycle, an acoustic signal warns the operator.

Granita cycle
Correct cooling end temperature depends on the quantity of sugar inside granita.
Roughly for 150 gr/liter, -3 °C is the correct value, while -9 °C is the correct value
for 350 gr/liter. Thus, a different Granita Temperature Set is automatically set
according to sugar content.
By selecting a Granita cycle, when the recipe starts, Increase and Decrease LEDs
turn on and the user can select the sugar content for his/her Granita.
The initial display will read:
GRANITA
Sugar 150 g/l
for this selection the temperature Set is -3°.
If the Increase Key is pressed the display will read:
GRANITA
Sugar 250 g/l
for this selection the temperature Set is -6°.
If the Increase Key is pressed the display will read:
GRANITA
Sugar 350 g/l
For this selection the temperature Set is -9°.
After 5" or when the Freezing key is pressed, the cycle starts with the Sugar content
chosen by the user.
The display shows:
GRANITA

The second line of the display shows the decreasing Timer, the current temperature
and the time Set chosen by the user.
By pressing Freezing key, Increase and Decrease LEDs turn on and it is possible to
edit the time Set for Granita freezing with Increase and Decrease keys within 10".
When the time set by the user is over, the acoustic signal indicates that granita is
ready for extraction and the display shows:
