Function

Hold Down Frame
Holds filter media tightly against pan bottom to create the proper
suction seal for pumping oil.

mesh stainless
Filter Screen
(Standard)
Stainless steel, micro
‐
mesh screen filter media removes fine particles
of cooking sediment and residue from used cooking oil. It is
washable and reusable; eliminates paper waste and reduces
operating cost.

Filter Paper
(Optional)
Paper filter media may be used instead of the mesh screen. One (1)
sheet is required.
IMPORTANT! Do not use filter paper and screen
at the same time.

Filter Pan
Collects oil drained from fry vat(s). Contains the filter media. The
pan has casters and is easily removed for cleaning. A permanent
perforated support screen is welded to the pan bottom to help
protect filter pump and plumbing from unintended large debris.
THIS SUPPORT SCREEN IS NOT A FILTER ... FILTER MEDIA MUST BE
USED!
At a minimum, it is recommended that oil be filtered after every
4th load cooked in a vat.

Filter Pan Hose Fitting
Connects
pan assembly
to the fryer filtration system. Hose must be
disconnected before pan can be removed.

Filter Pan Cover
Lays atop pan. Helps contain splash and splatter as oil is drained
from vat. Helps keep cabinet interior
&
floor area clean. Also,
safeguards oil from possible contamination.

Filter Pan Assembly
Never remove Filter Pan while it contains hot cooking oil. Spillage and/or burn injury are
possible. Please see
Section 5.04, Removal of Liquid Shortening

Always wear thermal protection, such as oven mitts or gloves, when handling these parts. They become very
HOT during normal operations!

Never drain boil
‐
out solution into the filter pan. Generally, it is corrosive and will damage the pan and filter
pump. See
