To help prevent flavor transfer, particularly for seafood, certain you may want the oil filtered after
cooking only
one (1) batch
of an item. This setting overrides the global
FORCE FILTER
setting specified in
User
Settings.

which, when selected, will allow
two (2) batches
of the item to be cooked before filtering is forced.

Menu Presets
are pre
‐
programmed with default settings. Menus 1 thru 10 are set for some typically popular
menu items (table below). All others contain the general settings shown on the last line of the table. You can edit
any of these settings to customize them for your specific applications and menu offerings.
Users do not actually have to add the
Menu Item Presets,
as values already populate all 50 items. You only need to
edit the settings to create your custom settings. The following sections explain the steps required.
