Removing and cleaning beater
Loosen the knob and remove the OR gasket.
Pull the beater upwards; remove the scraper.
Immerse the previously disassembled com-
ponents into the tub with the sanitizer and
brush the surfaces with care. Pay special
attention to the inner part of the beater shaft
and the scraper fixing pins (fig.IV/08).
Moving and cleaning plug
Pull towards you the wash cap.
Unscrew the threaded ring.
Remove the wash plug from the machine.
Remove the O
-
rings.
Place the previously disassembled compo-
nents into the tub with the sanitizer and
brush all the gasket seats with care
(fig.IV/09).
All the parts previously disassembled must remain immersed in the saniti-
zing solution for the time provided by the sanitizer manufacturer (fig.IV/10).
1.3
Sanitizing fixing parts
While the removable parts soak in the sanitizer inside the tub, proceed sani-
tizing the fixed parts of the machine:
Sanitizing the cylinder
Immerse a disposable paper cloth in the
sanitizing liquid.
Pass the cloth over all the batch freezing
cylinder surfaces.
Also pass the cloth over the visible internal
and external surfaces of the drain pipe
(fig.IV/11).
Use the brush, previously immersed in the
sanitizing solution, to clean the drain pipe
thoroughly (fig.IV/12).
Sanitizing drive shaft
Immerse a disposable paper cloth in the
sanitizing liquid.
Pass a cloth over the entire surface of the
drive shaft positioned at the centre of the
batch freezing cylinder. Pay particular atten-
tion to the drive gauge and the joint on the
bottom with the base of the batch freezing
cylinder. (fig.IV/13)

Never use any type of solvents and/or thinners to preserve the
plastic parts and gaskets during washing.

Chemical sanitizing products must be used in compliance with
standards in force and with the utmost caution.

During sanitizing operations, do not touch parts with tissues, spon-
ges, rags or any other material.

Rinsing and drying
Wash your hands well and/or wear disposable gloves.
Remove from the sanitising cylinder all the components which were pre-
viously disassembled, brushed and immersed.
Rinse them with plenty of cold drinking wa-
ter, making sure to remove all possible
leftover sanitising solution.
Place the rinsed components on a clean
table and let them dry in the air (fig.IV/14).
Do not use rags, sponges or anything else
to dry the components. Make sure no dust
or other impurities come into contact with
the sanitized surfaces while they are drying.
Also carefully rinse the fixed parts of the machine which were treated with
the sanitizing solution (cylinder, drive shaft, etc.).
When all the components are dry, put them back onto the machine making
sure the gaskets and scrapers are in good conditions. If there is evidence of
excessive wear or damage, replace them.
