- Egg
Eggs can improve a bread’s texture, make the bread more nourishing and larger
in size, and add a special egg flavor to the bread. When using, it must be stirred
evenly into the dough.
- grease, butter and vegetable oil
Grease can make bread soft and extend storage life. Butter should be melted or
chopped into small particles prior use, so as to be stirred evenly when you take
it out from the refrigerator.

Baking powder is mainly used to rise the

need rise time and produces gas which forms bubbles that softens the texture of
bread.

baking powder.
- water and other liquids
Water is an essential ingredient for making bread. Generally speaking, water
temperature should be between 20°C and 25°C. However, water temperature
should be between 45-50°C for achieving rising speed for making
ultra Fast
bread. The water may be replaced by fresh milk or water mixed with 2% milk
powder, which can enhance bread flavor and improve crust color. Some recipes
may call for juice for the purpose of enhancing bread flavor, e.g.: apple juice,
orange juice, lemon juice and so on.
