Continue chilling
After the chilling program has ended, and you realize thet the chilling is not good enough (you
need to get the food colder), you can continue the program pushing CONTINUE.
The kettle adds 10 minutes to the time. Instead of time, set the temperature lower (and you
can then remove the time setting).
Chill result
The cold comes from the sides and is mixed with the rest of the food. This is why the
temperature in the side odf the kettle is lower than in the center of the kettle. The temperature
difference gets smaller during the chilling until at the end the temperature should be
approximately the same all over.
How even the temperatures get depends on the food and the mixing (turning hot food to the
sides and cold food to the center).
If the product is such a type that still at the end of chilling the temperature is uneven between
the side and the center of kettle, a goof hint is to calculate the set value for chilling from the
chilling water temperature:
tc = Chilling water temperature, +tt = Target temperature, T = temperature setting for chilling
T = (tc + tt ) / 2

Note: The kettle interpretes temperatures as +89.5 to +90.4 as 90°C; and same way +3.5 to
+4.4 as +4°C. Thus a setting 4°C for chilling can eventually stop chilling when temperature
remains a long period in 4.4°C at the rim.
Example:
150L kettle, 150L food, first chill step +6°C tap water (winter) 15 minutes (food to temperature
40°C). Then second step with circulated ice water (from ice bank) to +3°.
• 1. step to 40°C, 15 min 25 L/min, 375 liter
• 2. step to 3°C, 45 min 85 L/min, (circulated 2475 liter).
• Chill water removed from the jacket 25 liter.
• Total water consumption 0,4 m3.
• Energy consumption for chilling 7 kWh.
• Other energy consumption 3,75 kWh (pumps, mixer, etc.)
• Total time 60 minutes.
Same only with circulated ice water (0°C):
• Total water consumption 0,025 m3.
• Energy consumption for chilling 11,5 kWh.
• Other energy consumption 4,45 kWh (pumput, mixer, etc.)
• Total time 58 minutes.
• BUT; the requirement for chilling capacity (=size of ice bank) is almost double!
