Service Manual for Proofer Oven with Touch Screen Controls (TSC)

CLEANING THE OPTIMIST NOZZLE

Note:  It is not necessary to disconnect the unit from 

its power source for this procedure.

Also see Duke Publication 512419 for this procedure. 
1.  Turn power to the Proofer off by using the Touch 

Screen Display. It is not necessary to turn off water 

supply to the unit. 

2.  Remove necessary racks and the Proofer Floor Panel 

to gain access to the Optimist Nozzle assembly. 

3.  Use quick disconnect lever to remove the coupling 

and nozzle assembly by pushing the lever down and 

sliding assembly straight out.

4.  Use 3/4" and 5/8" wrenches to remove the nozzle 

from its body, remove, clean and re-install the filter.

5.  Soak nozzle in vinegar for 4-8 hours. Wipe residue 

from nozzle and rinse in clean water. Do not insert 

objects into nozzle outlet as this can change the 

water spray performance. Replace nozzle assembly 

if  mineral  deposits  from  hard  water  cannot  be 

removed.

6.  Reinstall nozzle by inserting into quick-connect 

fitting until fully seated. 

7.  Using the Touch Screen Display, turn the Proofer 

on, allow the water system to purge and check for 

proper Optimist Nozzle spray.

8.  Using the Touch Screen Display, turn the Proofer 

off and wait for the fan to stop turning. Reattach 

the Proofer Floor Panel and slide in all of the racks 

removed earlier.
