Quick Disconnect

4. Remove the Quick Disconnect Coupling from the
Optimist Nozzle.
5. Remove the Coupling Body.
6. Place Teflon tape on the threads of the new Coupling
Body and the new Quick Disconnect Coupling.
7. Using the appropriate open end wrench reattach
the Coupling Body to the pipe elbow in the Proofer
floor.
8. Using the appropriate wrenches screw the new
Quick Disconnect Coupling onto the new Optimist
Nozzle.
9. Using the quick disconnect feature attach Optimist
Nozzle assembly to Coupling Body.
10. Using the Touch Screen Display, turn the Proofer
on, allow the water system to purge and check for
proper Optimist Nozzle spray.
11. Using the Touch Screen Display, turn the Proofer
off and wait for the fan to stop turning.
12. Reattach the Proofer Floor Panel and slide in all
of the racks removed earlier.
Oven Heat Elements
WARNING

FOLLOW THE ELECTRICAL LOCKOUT/
TAGOUT PROCEDURE. DISCONNECT ALL
CIRCUITS. FAILURE TO COMPLY CAN
CAUSE PROPERTY DAMAGE, INJURY OR
DEATH.
There are two Oven Heat Elements, one on each side of
oven. The elements are behind the Oven Ceiling Panel.
1. Place the unit’s Power Switch in its OFF position,
and follow the proper Lockout/Tagout procedures.
2. Remove the Oven Ceiling Cover; refer to the
PANELS AND COVERS section of this manual
for specific instructions.

and ease panel out if needed.

CAUTION: Use care when removing the Oven
Ceiling Panel to prevent damage to the
fan blades.
