Cleaning & Maintenance
Section 4
Cleaning and Sanitizing Grill Exterior
•
Frequency: Every 2 hours throughout the day.
•
Areas to clean: Front Panel, Display Screen, Sides, Platen
Top and Platen Arm Cover.
•
Method: Spray degreaser solution onto a damp, clean,
sanitized towel and then wipe down the exterior. Repeat
process with sanitizer and leave for specified time to kill
bacteria. Remove excess degreaser/sanitizer with the
clean side of the towel after each process.
•
Benefits: To reduce significantly the oil and carbon
build-up. This also reduces risk of cross-contamination
from raw chicken juices that may drip onto the display
screen.
NOTE
:
•
Before cleaning the display screen, press lock icon
on screen to temporarily lock the touch screen.
•
Use damp towel only
;
wiring out the towel well.
•
The sanitizer must be left on the front panel for 60
seconds to kill any remaining bacteria.
•
DO NOT spray solution directly onto the screen or
other surfaces.
Cleaning Grill at Midday
•
Frequency: Once a day after peak meal time.
•
Areas to clean: Top Grate, Bottom Grate, Plastic Oil Pan,
Oil Roller, Grease Drawer, Grill Brush, CFA's Metal Spatula
• Method:
1. Use Detailing Tool to scrape grooves and the cook
surfaces.
