Ingredients
2 cod filets
1⁄2 cup buttermilk
1⁄2 cup quinoa flour
1⁄2 teaspoon salt
1⁄4 teaspoon pepper
olive oil, for spritzing
Directions
Soak the fish in the buttermilk for at least 1 hour.
Combine the quinoa flour and seasonings in shallow baking dish.
Place the Dual Rack (in high position) into air fryer.
Remove the fish from the buttermilk and dip into the seasoned flour.
Spritz with oil and place on the rack.
Lower the lid, set the temperature to 410°, and set timer for 12 minutes.
Press the “On” button.
Open the lid and turn the fish half way through cook time.
