4. MAINTENANCE
The cooker works better if all its parts are
without combustion residuals, a clean cook-
er will be less exposed to problems due to
wear. Cleaning frequency depends on how
much and how the cooker is used, as well as on combustible quality. Anyway the clean-
ing must be done by a technician minimum
once a year.
All these operations must be done with cold
kitchen.
To allow a removal of the combustion re-
siduals also in the places more difficult to
reach, S 80 and S 90 models are endowed
with a cleaning door below the oven. To
start the cleaning open the door unscrew- ing the fixing pommels and then using the
scraper remove all the carbon residuals and
then close the door. In S 60 CF model, the
cleaning the fume-circuit may be done re-
moving the plane inside the oven.

performance of the cooker, moreover it may
occurs the ruin of the grill. So you should re-
move the ashes regularly.
First, you have to remove the residual ash from the combustion chamber with the spe-
cial tool, then empty the ash box. Remove
also the ashes eventually went out of the
box. Sporadically, remove the plate and
scrape off and brush all the internal surfaces.

Inside the wood box you can find a small
glove box that can be useful to keep the
smallest tools, that in this way remain sepa-
rated from the wood.
3.9 GLOVE BOX
On every cooker it is possible to use a stain-
less steel plate cover, made to cover the
plate in the periods in which the cooker is
not used. In this way you obtain an uniform
desktop. The plate cover must be used with cold cooker. Before placing it, be sure that is
not present humidity, that the plate is clean
and that all the necessary maintenance is
done.
