Cooking meals sometimes may generate a
steam excess inside the oven. On some mod-
els is present a valve that allow to eject the
steam in excess. The valve is placed on lat-
eral wall inside the oven and should be ro-
tated to open the ventilation holes. To avoid
possible burnings, it is recommended to op-
erate on the valve before lighting the stove.

WARNING! when the fire comes into force you must reinsert the starting key in
order to force the smoke to heat all the parts of the cooker. Cookers are built to
work with the starting key closed. If the cooker works with the starting key open it
will be limited in strength and profit.
The internal temperature of the oven depends
on the combustion speed and on the amount
of combustible inserted. In particular, operat-
ing on the primary air regulator and so on the
combustion speed, you can obtain a regular
combustion to avoid sudden changes in tem-
perature inside the oven. If you want to heat
the oven starting from cold kitchen, we sug-
gest to raise the temperature with an average
fire, then decrease the combustion speed to
keep the temperature steady.
Wood fired cookers are endowed with oven’s
door with glass and are also endowed with a
thermometer which makes easier the control
of temperature. If you want to brown dishes
you should keep them in the upper part of the
oven, instead if you want a steady cooking you
should put the foods in the centre. For a more
steady cooking it is possible to rotate horizon-
tally (180°) the grill or the baking-pan at half
cooking period.
For example, to cook the spineless person bis-
cuits in a correct way, it is necessary the pre-
heating of the oven at a temperature indicated
on the thermometer of 150°, keeping it in tem-
perature by adding more or less 1 Kg of wood
for every charge as the reaching of the coals.
Once the temperature becomes stable, insert
the baking-pan with the biscuits in the central
position in the oven for 10 minutes, then ex-
tract the baking-pan, rotate it and reinsert it
again in the central position for other 5 min-
utes. In the end, remove the baking-pan from
the oven and leave cool the biscuits.
Cookers with oven are endowed with elec-
tric light in order to make easier the con-
trol of cooking inside the oven. In standard
cookers the switch is located on the side of
the wood box. To operate on it you have
to extract the wood box (picture 18). In the
cookers with rounded hollow, the switch is
located in the upper part of the hollow, in
central position (picture 19).
