11.4 • MANUAL - COOKING CYCLE: STEAM WITH CORE PROBE (OPTIONAL)
Upon the equipment startup, it’s displayed a screen
as shown in the figure.
by default, it is set a convection manual program with
single timed cycle.
To set the steam mode, press the STEAM button
(shown by the arrow in the figure).
To change the temperature in the cavity, press the CA-
VITY TEMPERATURE button and change the value by
turning the knob (to the right to increase, to the left to
decrease). Once you reach the desired value, confirm
by pressing ENTER.
NOTE - The new temperature entered will continue to
flash until it is confirmed. If this is not done within a
few seconds, the program will revert to the previous
value entered. You can set a temperature between
30°C and 130°C (86°F and 266°F).
Then set the core probe; press the PRObE / TIME but-
ton twice and turn the knob to enter the desired value.
Press ENTER to confirm.
NOTE - The new value entered will continue to flash
until it is confirmed. If this is not done within twenty
seconds, the program will revert to the previous value
entered.
NOTE - The core probe has priority over the chamber,
so as soon as the probe reaches the set temperature,
the cycle will finish even if the temperature in the
chamber has not reached the set value.
NOTE - In steam mode, the humidity is set to its ma-
ximum value (FH) and you cannot edit it.
NOTE - While running a program, you can manually
inject humidification water: when a program is run-
ning, press the HUMIDITY button. The humidity value
displayed flashes, so press the HUMIDITY button
again and hold it down. The equipment injects humi-
dification water until the button is released.
