CLEANING SEDIMENT
- After having let the particles settle, when the oil has
to hold it in a horizontal position and to move slowly so
that the larger sediments will not fall through.
a)
For counter-top models
(SF 10M - SF 10DM)
- Before opening the drain valve (6), insert tube (15)
into hole (5) as shown in the drawing.
- Position a container or metal bucket with a capacity of
at least 12 liters under the drain, then open the lever
(6) after having lifted the pin (14).
- After draining completely, close the valve by turning
the lever (6) and remove the tube (15), moving it in the
opposite direction.
b)
For built-in models
(SFM 20M - SFM 20DM)
- Check that the draining container (9) supplied with
standard equipment is inserted under the drain (8),
then turn the drain throttle to open the valve.
CLEANING
To clean the stainless steel parts, follow these instruc-
tions:
- Clean these parts frequently and thoroughly, using a
wet cloth. Soap and water, or common detergents
may be used, as long as they do not contain abrasive
substances.
- Rinse using clean water and dry carefully.
IMPORTANT
:
After having completed the cleaning procedure, the well-
dried stainless steel surfaces should be protected using
products that are readily available on the market de-
signed to prevent corrosion.
Never use a wire pad for cleaning, since tiny deposits
could be left on the surface, and lead to the formation of
rust. A steel wool pad may be used if necessary.
Do not allow temporary or permanent contact with iron
material; this will prevent corrosion from starting.

PROLONGED NON-USE OF THE APPLIANCE
If the appliance is not to be used for a prolonged amount
of time, it is best:
2. To cover the frying tank in order to protect it from dust.
3. To clean the unit carefully.

MALFUNCTIONING
THERMOCOUPLE
Replace the thermocouple
SAFETY THERMOSTAT
replaced the thermocouple, short-circuit the wires so as
to exclude the safety thermostat. If the inconvenience
disappears, replace the safety thermostat.
The safety thermostat starts operating:
Reset the thermostat. Switch the machine on again and
check the oil temperature at a steady operating rate.
The safety thermostat is calibrated to start operating at
an interval comprised between 211 °C and 230 °C.
Check at what temperature the thermostat starts operating
by using a dip thermometer. If the operating temperatures
are too low, it must be replaced. If the temperature at which it
start operating is correct, the valve is faulty (bulb or capillary).
VALVE
It is strictly prohibited to tamper with the valve.
Never replace or intervene on the capillary and/or
the bulb.
Tampered valves will not be replaced under warranty.
The safety thermostat starts operating:
After having checked the oil temperature (see point 2)
replace the valve.
If the problem continues after having replaced the
thermocouple and after having short-circuited the wires
to exclude the safety thermostat, the valve’s electromagnet
is faulty. If the valve is under warranty, replace it. If the
warranty has expired (24 months after the valve
manufacturing date), replace the electromagnet only.
PIEZOELECTRIC START UP
There is no spark:
Check that the piezo device is in good operating conditions
(it must not be soiled by oil and the cable must not be cut
or frayed. Make sure that it is connected to the machine
body by means of the cable and/or it is connected to the
control panel. Check that the piezo device and the cable
are in good condition. Replace the glow plug.
