Overrun settings
The overrun adjustments of the ice-cream of the cylinder is carried out through an air electro-
valve connected to the pump. In PRODUCTION, once the MP is activated, the EVAria
activates during the time in which the MP is ON.
This valve activates cyclically with ON/OFF times adjustable in step Overrun 1 (U18 or T41). This
parameter is programmable from 1 to 6, and correspond to each of the set ON/OFF times
(see table below):

It also has value 7, free and adjustable in the Prog menu for the cylinder with the parameters
T20/T21.
Do Not Serve (WAIT)
When PRODUCTION is selected, the display shows – “ Wait! ” which means that the ice-
cream has reached its ideal texture and then, it should not be removed until the message
turns off.
For example:
Once the HOT is reached (the first time, while in the following the value of
HOT > Set Hot (U16) – Hysteresis Hot - HOB Hot Block (T49))
will have a normal operation. On this point, the display shows:
