Overview

Never remove the Filter Pan while it contains liquid shortening. Oil spillage and/or burn

injury are possible. Please see Section 5.04, Removal of Liquid Shortening.

•

Always wear thermal protection, such as oven mitts, when handling these parts. They can become very HOT

during normal operations!

•

Never drain boil-out solution into the Filter Pan. It is corrosive and will damage the Filter Pan and

components, and the Filter Pump. See Section 6.01, Boil-Out Procedure.

Filter Pan Assembly

Item

Description

Function

Hold Down Frame Levers (4) Engages with the studs on the Pan frame and secures the Hold-

Down Frame tightly against the filter media to create a good seal.

Hold-Down Frame

Holds the filter media in place and creates a good suction seal for

pumping.

Filter Paper

(2 sheets required)

Disposable paper filter media; filters sediment and cooking residue

from the cooking oil. Typically, the system requires that (2) sheets

be used.

Filter Pan Screen

Supports the filter media in the Filite Pan to allow proper

filtration.

Filter Pan

Collects and contains cooking oil drained from the cook vat during

the filtration process. The Filter Pan is removable for cleaning and

refreshing the filter media.

Filter Pan-Quick Disconnect

Hose

Connects the Filter Pan assembly to the Fryer oil filtration system.

This hose must be disconnected before the Filter Pan can be

removed from the unit.
