7. RECIPES
SHRIMP KOFTA WITH PEANUT SAUCE
500 g of peeled shrimp tails
1 chopped shallot
1 chopped garlic clove
1/2 bunch of coriander leaves, chopped
5 cl of sesame oil
1 tbsp of potato starch
Salt and freshly ground pepper
24 12-cm wooden skewers
Peanut sauce
30 cl of coconut milk
3 tbsp of peanut butter
1 tsp of grated lime zest
5 cl of soy sauce
2 tbsp of brown sugar
1 tbsp of grated ginger
• Chop the shrimp tails and mix with the shallot, garlic, coriander, sesame oil and potato starch.
• Season to taste. Shape into small sausages and set aside in the refrigerator for 30 minutes.
• Pour into a saucepan all the ingredients for preparing the sauce.
• Bring to a boil and cook on very low heat for 5 minutes. Set aside.
• Carefully place the sausages lengthwise on the wooden skewers.
• Switch on the appliance and preheat both plates.
• Place the skewers on the lightly oiled griddle and cook each side for 2 minutes.
• Serve the skewers on a small plate and the sauce in a jar.
• Dip the skewers in the peanut sauce before eating.
Suggestion
Soak the wooden skewers for half an hour in cold water before using.
This will prevent them from burning during cooking.
