The deviation may be due to incorrect testing conditions:
- determination of water contained in flour incorrect, higher than actual value,
- too much flour,
- not enough water,
- mixing time too long,
- insufficient oiling of the Alveo (extrusion and rest plates), including during use,
- oil acidity level too high,
- excessive or abnormal handling of patties,
- lab temperature too high (> 20°C and dry air).
